Absinthe Cocktails
Absinthe was the drink of choice among artists and writers in the mid to late 19th century. It inspired poets and appeared in works by Pablo Picasso and Vincent Van Gogh. It was drunk by the scandalous playwright Oscar Wilde, the eccentric Toulouse-Lautrec, the poets Charles Baudelaire and Edgar Allen Poe, and the famous 20th century author Ernest Hemingway, just to mention a few. By the end of the 19th century, the use of absinthe was widespread, and in France, it was as popular as wine. In the cafes of Paris, the cocktail hour became known as “L’Heure Verte”, the Green Hour. As its popularity grew, so did public hysteria over its mysterious effects. Banned in France in 1915 (though never in Canada), Absinthe is making a comeback.

Taboo Absinthe
Canada’s only genuine absinthe, Taboo (...) has no artificial flavours, preservatives, chemicals or added sugars (...). Ingredients include wormwood, lemon balm, fennel, green anise, star anise and hyssop in a fruit alcohol base. And yes, we are talking about REAL wormwood, the ingredient containing thujone, a natural chemical reputed to induce visions, and the principle culprit behind absinthe’s wicked repute as a naughty, addictive substance.
Pernod Absinthe
Like the product sold in the 19th century, this new spirit has an alcohol content of 68° and contains no added sugar, but with thujone content in accordance with the legislative constraints in force. Made from extracts of "roman wormwood", "wormwood" and a blend of other aromatic herbs.
Hill's Absinth
Hill's Absinth, a glaucous-green drink with a distinctive herbaceous mint, anise and slightly bitter taste (...). It is handcrafted, triple distilled, aged in oak barrels and has been manufactured according to the original recipe used in the Czech Republic since 1920.
Siréne Absinthe
Takes a fairly traditional approach to creating Sirène. North Shore Distillery uses the traditional trinity of absinthe ingredients along with a proprietary blend of additional herbs and spices to create Sirène's richness and complexity. The process requires a significant amount of time, preparation and botanicals, but the result is worth the effort.
Lucid Absinthe
Strong Anise and Fennel, with some pepper in the finish. This is the absinthe that started the resurgence, by becoming the first legal for sale absinthe in the US.
